  • 1 cup (240ml) warm water (around 110°F/43°C)
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 2 tbsp olive oil
  • ½ cup (115g) unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh thyme leaves, chopped
  • ½ tsp dried oregano
  • ¼ tsp salt
  • Freshly ground black pepper, to taste
  • Optional: Grated Parmesan for sprinkling
  • Optional: Red pepper flakes for a little kick

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add flour, salt, and olive oil to the yeast mixture. Stir until it starts to come together.
  3. Knead the dough: Turn dough onto a floured surface and knead for 8-10 minutes until smooth and elastic, or knead with a stand mixer dough hook on medium speed for 5-6 minutes.
  4. Let it rise: Shape dough into a ball, place in a lightly oiled bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  5. Shape the knots: Punch down dough, divide into 12 equal pieces (~2 oz each). Roll each into a 10-inch rope and tie into a loose knot, tucking ends underneath.
  6. Second rise: Arrange knots on a lined baking sheet spaced 2 inches apart, cover loosely, and let rise for 20-30 minutes until puffy.
  7. Bake: Preheat oven to 400°F (200°C). Bake knots for 15-18 minutes until golden brown and crispy.
  8. Make herb butter: Mix softened butter with garlic, parsley, thyme, oregano, salt, and pepper.
  9. Brush and serve: Brush warm knots with herb butter immediately after baking. Optionally sprinkle with Parmesan or red pepper flakes.

Notes

Use warm water at about 110°F to activate yeast properly. Knead dough until smooth and elastic but not sticky. Brush herb butter immediately after baking for best flavor and shine. For gluten-free, substitute flour with gluten-free blend and add xanthan gum if needed. For dairy-free, use plant-based butter or coconut oil.
