  • Optional: 2 tablespoons grated Parmesan cheese (omit for dairy-free)

Instructions

  1. Preheat your oven to 450°F (230°C). If using a pizza stone, place it in the oven while it heats up (about 30 minutes).
  2. In a large bowl, whisk together gluten-free flour blend, almond flour, baking powder, xanthan gum, and salt until evenly combined.
  3. In a separate bowl, mix warm water, olive oil, honey or maple syrup, and apple cider vinegar until the honey dissolves.
  4. Gradually pour the wet mixture into the dry ingredients while stirring with a spoon or spatula until the dough comes together but is slightly sticky. Add up to 2 tablespoons more water if too dry.
  5. Let the dough rest for 5 minutes to hydrate the flours and make shaping easier.
  6. Lay parchment paper on a countertop, sprinkle with gluten-free flour, and transfer the dough onto it. Pat or roll into a 12-inch (30 cm) circle about ¼ inch (6 mm) thick.
