Instructions

  1. Preheat your oven to 425°F (220°C). Grease two 6-ounce ramekins generously with butter and dust lightly with cocoa powder to prevent sticking.
  2. Melt the butter and chocolate together gently in a small saucepan over low heat, stirring constantly until smooth. Alternatively, microwave in 20-second bursts, stirring in between. Let cool slightly.
  3. In a medium bowl, whisk eggs and sugar briskly for about 3 minutes until the mixture is pale and thickened.
  4. Stir in vanilla extract and espresso powder (if using) to the egg mixture, blending well.
  5. Pour the melted chocolate mixture into the egg mixture slowly, folding gently with a spatula to keep air in the batter.
  6. Sift the flour and salt over the batter and fold in carefully until just combined.
  7. Divide the batter evenly between the two prepared ramekins.
