  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ¾ cup (200 g) Lotus Biscoff cookie butter, stirred well
  • 2 tablespoons (30 ml) heavy cream (optional, for easier swirling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper or grease it.
  2. Melt the butter gently in a microwave or on the stove.
  3. Combine melted butter with granulated and brown sugars in a large bowl. Mix until well blended and glossy, about 2 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract until smooth and slightly thick.
  5. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually fold dry ingredients into wet mixture until just combined.
  6. Pour half the brownie batter into the prepared pan and smooth evenly.
  7. Mix Lotus Biscoff cookie butter with heavy cream (if using) until pourable but thick.
