  • ¾ cup (180 g) natural creamy peanut butter
  • ½ cup (90 g) dark chocolate chips or chopped dark chocolate (70% cocoa recommended)
  • ¼ cup (85 g) honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • Pinch of sea salt
  • ⅓ cup (40 g) chopped peanuts

Instructions

  1. Preheat oven to 350°F (175°C). Spread rolled oats evenly on a baking sheet and toast for about 8 minutes, stirring halfway through until golden and nutty.
  2. Melt the dark chocolate in a microwave-safe bowl in 30-second bursts, stirring each time until smooth, or use a double boiler.
  3. In a large mixing bowl, combine peanut butter, honey, vanilla extract, and cinnamon (if using). Stir until smooth and well blended.
  4. Add toasted oats and chopped peanuts to the peanut butter mixture. Pour in melted chocolate and sea salt. Stir until fully coated and mixture is glossy and thick.
  5. Using a tablespoon or small cookie scoop, drop spoonfuls onto a parchment-lined baking sheet. Press each mound gently to form compact, bite-sized rounds.
  6. Place the tray in the refrigerator for at least 30 minutes to let the bites firm up.
  7. Once set, enjoy immediately or transfer to an airtight container for storage.
