These Twix cookies combine a crunchy cookie base with a chewy caramel center and a melty chocolate topping, making them a perfect easy holiday treat that everyone will love.

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (110g) packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (150g) soft caramel bits or chopped soft caramel candies
  • 1 1/2 cups (270g) semi-sweet chocolate chips or chunks
  • 1 tablespoon coconut oil or unsalted butter

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat 1 cup softened unsalted butter with 1 cup granulated sugar and 1/2 cup light brown sugar until light and fluffy, about 3-4 minutes.
  3. Beat in 2 large eggs, one at a time, then stir in 2 teaspoons vanilla extract until well combined.
  4. In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Gently stir in 1 cup soft caramel bits, distributing evenly without breaking them up too much.
  7. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on the prepared sheets. Chill dough for 15 minutes if too soft.
  8. Bake for 10-12 minutes, until edges are golden and centers look set but still soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  10. Melt 1 1/2 cups semi-sweet chocolate chips with 1 tablespoon coconut oil in 30-second intervals, stirring until smooth.
  11. Spread melted chocolate over each cookie using a spoon or small offset spatula.
  12. Allow chocolate to harden at room temperature or chill in the fridge for 10-15 minutes.

Notes

Chill dough for 15-30 minutes if kitchen is warm to prevent spreading and keep caramel bits intact. Rotate baking sheets halfway through baking for even cooking. Melt chocolate slowly and stir frequently to avoid burning. Spread chocolate while cookies are slightly warm for better adhesion. Dough can be prepared up to 3 days ahead and refrigerated. Freeze baked cookies up to 3 months.
