These easy champagne jello shots are a quick and festive treat perfect for celebrations, combining the bubbly flavor of champagne with a fun, jiggly texture.

  • 1 cup (240 ml) champagne or sparkling wine (dry brut style recommended)
  • 3 tablespoons (30 grams) unflavored gelatin powder
  • 1 cup (240 ml) cold water
  • 2 tablespoons (25 grams) sugar
  • Optional: 1 teaspoon lemon zest or orange zest
  • Optional: edible glitter or gold sugar sprinkles

Instructions

  1. Pour 1 cup (240 ml) of cold water into a medium bowl. Sprinkle 3 tablespoons (30 grams) of unflavored gelatin evenly over the surface. Let it sit for about 5 minutes until the gelatin absorbs the water and looks spongy.
  2. Place the bloomed gelatin bowl over a pot of simmering water (double boiler method) or microwave it in 20-second bursts. Stir gently until the gelatin is completely dissolved and the mixture is smooth. Avoid boiling.
  3. Stir in 2 tablespoons (25 grams) of sugar until fully dissolved. Taste and adjust sweetness if desired.
  4. Slowly pour in 1 cup (240 ml) of champagne. Stir gently to combine, being careful to keep as much fizz as possible.
  5. If using, stir in 1 teaspoon of lemon or orange zest.
  6. Quickly but carefully pour the mixture into shot glasses or silicone molds, filling about 3/4 full.
  7. Refrigerate for at least 4 hours or overnight until firm but still slightly jiggly.
  8. Just before serving, add edible glitter or gold sugar sprinkles on top. Pop them out of molds or serve in shot glasses.

Notes

Bloom gelatin well before heating to avoid grainy texture. Avoid boiling gelatin to preserve setting power. Pour champagne slowly to keep fizz. Chill overnight for best texture. For vegan version, substitute gelatin with agar-agar powder and adjust setting time.
