Instructions

  1. Preheat your oven to 425°F (220°C). Grease two 6-ounce ramekins generously with butter and dust with a little cocoa powder to prevent sticking.
  2. In a microwave-safe bowl, combine the butter and chopped chocolate. Heat in 20-second bursts, stirring between each, until fully melted and smooth (about 1 to 1.5 minutes). Be careful not to overheat.
  3. In a separate bowl, whisk the eggs and sugar together vigorously until thick and pale, about 2-3 minutes.
  4. Gently fold the melted chocolate mixture into the egg mixture using a spatula to preserve airiness. Then sift in the flour, salt, vanilla extract, and espresso powder if using.
  5. Fold the dry ingredients carefully until just incorporated; do not overmix.
  6. Divide the batter evenly between the prepared ramekins, filling about 3/4 full.
  7. Bake for 12-14 minutes until edges are set and firm but the center is still soft and jiggly.
