  • ½ medium onion, finely chopped
  • 1 cup shredded cheddar cheese (about 100 g)
  • ½ cup black beans, drained and rinsed
  • ½ cup fresh salsa (store-bought or homemade)
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp olive oil or butter
  • 1 tsp chipotle powder or smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Prep the veggies and protein (10 minutes): Dice the bell peppers and onion finely. Crumble the cooked sausage or chorizo into bite-size pieces. If sausage is raw, brown it first in the skillet and set aside.
  2. Sauté the vegetables (5-7 minutes): Heat olive oil or butter in a skillet over medium heat. Add diced onion and bell peppers, season with salt and pepper, and cook until softened and slightly caramelized, about 5 minutes.
  3. Whisk and cook the eggs (5 minutes): In a bowl, whisk eggs with salt, pepper, and chipotle powder or smoked paprika. Pour into skillet with veggies on low heat. Stir gently and slowly until eggs are just set but still creamy.
  4. Combine ingredients (2 minutes): Stir in cooked sausage, black beans, and half the shredded cheddar cheese. Mix gently to combine and melt cheese slightly.
  5. Warm the tortillas (1-2 minutes each): Heat each tortilla in a dry pan or microwave until pliable.
  6. Assemble the burritos (10 minutes): Lay a warm tortilla flat. Spoon about ⅙ of the egg mixture onto the center. Add a tablespoon of fresh salsa, sprinkle with chopped cilantro and remaining cheese. Fold sides over and roll tightly. Place on a parchment-lined baking sheet.
  7. Store or serve: Enjoy immediately or wrap individually in foil and freeze for up to 2 months. To reheat, microwave for 1-2 minutes or bake at 350°F (175°C) wrapped in foil for 15-20 minutes.
