A quick and easy Korean ground beef rice bowl recipe that combines savory, sweet, and spicy flavors for a satisfying weeknight dinner ready in under 30 minutes.

  • 1 pound ground beef (80/20 preferred)
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 34 green onions, sliced thin
  • 1 teaspoon toasted sesame oil (plus extra for drizzling)
  • 4 cups cooked white rice (about 1 1/2 cups uncooked jasmine or brown rice)
  • 1 tablespoon sesame seeds (optional)
  • Vegetables such as shredded carrots, cucumber slices, or steamed broccoli (optional)

Instructions

  1. Cook 1 1/2 cups (270 g) of white or brown rice according to package instructions, about 15-20 minutes. Set aside and keep warm.
  2. In a small bowl, combine 1/4 cup soy sauce, 2 tablespoons brown sugar, 1 teaspoon toasted sesame oil, 3 cloves minced garlic, 1 teaspoon grated ginger, and 1/4 teaspoon red pepper flakes. Stir until sugar dissolves.
  3. Heat a large skillet over medium-high heat. Add 1 pound ground beef and cook for 5-7 minutes, breaking it apart with a wooden spoon until no pink remains. Drain excess fat if needed.
  4. Pour the sauce mixture over the cooked beef. Reduce heat to medium and stir to coat evenly. Simmer for 3-4 minutes until flavors meld and sauce thickens slightly.
  5. While beef simmers, slice green onions and toast sesame seeds in a dry pan for about 2 minutes until golden and fragrant. Prepare any optional vegetables.
  6. Assemble bowls by spooning warm rice into bowls, topping with the Korean ground beef mixture, green onions, toasted sesame seeds, and optional vegetables.
  7. Drizzle a small extra splash of toasted sesame oil over the bowls for added flavor. Serve immediately.

Notes

If sauce is too thin, simmer longer to thicken. If too salty, add a squeeze of lime or drizzle of honey. Use fresh garlic and ginger for best flavor. Do not overcook beef to keep it juicy. Toast sesame seeds for garnish. Substitute tamari for soy sauce for gluten-free version. Ground turkey or chicken can be used as a leaner alternative.
