These smoked salmon cucumber bites are simple, elegant appetizers that combine crisp cucumber rounds with creamy spread and silky smoked salmon, perfect for quick snacks or entertaining.

  • 1 large English cucumber, washed and sliced into 1/4-inch thick rounds
  • 6 ounces fresh smoked salmon, thinly sliced
  • 4 ounces cream cheese, softened (can substitute goat cheese or dairy-free cream cheese)
  • 2 tablespoons plain Greek yogurt (optional but recommended)
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon capers, drained (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt, if needed
  • Optional: thinly sliced red onion or smoked paprika for garnish

Instructions

  1. Rinse the English cucumber thoroughly. Using a sharp knife, slice it into 1/4-inch (about 6 mm) thick rounds. Pat the slices dry with a paper towel to avoid sogginess.
  2. In a mixing bowl, combine 4 oz softened cream cheese with 2 tablespoons plain Greek yogurt. Add 1 tablespoon chopped fresh dill and 1 teaspoon fresh lemon juice. Mix until smooth and creamy. Taste and add a pinch of sea salt and freshly ground black pepper as desired.
  3. Using a small spoon or butter knife, spread about 1 teaspoon of the cream cheese mixture onto each cucumber slice.
  4. Gently fold a thin slice of smoked salmon (about 1/2 oz or 15 g per bite) and place it on top of the spread.
  5. Top each bite with a caper or two for a burst of flavor. Optionally, sprinkle a pinch of smoked paprika or fresh dill for color and aroma.
  6. Arrange the bites on a serving platter. Cover loosely with plastic wrap and refrigerate for 10-15 minutes before serving to let flavors meld. Serve chilled or at cool room temperature.

Use English cucumbers for fewer seeds and less bitterness. Pat cucumber slices dry to avoid sogginess. Soften cream cheese before mixing for easier spreading. Assemble bites shortly before serving to keep cucumber crisp. Optionally substitute cream cheese and Greek yogurt with dairy-free alternatives or mashed avocado for a dairy-free version.
