A simple and indulgent overnight cinnamon roll casserole that combines gooey cinnamon rolls soaked in a rich custard, baked to perfection and topped with a tangy cream cheese glaze. Perfect for busy mornings or special gatherings.

Ingredients

Scale
  • 12 pre-made cinnamon rolls with icing (recommend Pillsbury)
  • 4 large eggs, room temperature
  • 2 cups (480 ml) whole milk
  • 1/2 cup (120 ml) heavy cream
  • 1/2 cup (100 g) granulated sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon cinnamon
  • A pinch of salt
  • 4 ounces (115 g) cream cheese, softened
  • 1 cup (120 g) powdered sugar
  • 2 tablespoons (28 g) butter, melted

Instructions

  1. Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Unroll or halve the pre-made cinnamon rolls and place them evenly in the dish, touching is fine.
  3. In a large bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt until smooth and combined.
  4. Slowly pour the custard mixture evenly over the cinnamon rolls, pressing down any rolls that float to ensure full absorption.
  5. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 8 hours or overnight.
  6. Preheat the oven to 350°F (175°C).
  7. Remove the plastic wrap and bake the casserole uncovered for 45-50 minutes until the top is golden brown and custard is set but soft inside. Tent with foil if browning too quickly.
  8. While baking, beat together softened cream cheese, powdered sugar, and melted butter until smooth and creamy.
  9. Once baked and slightly cooled (about 10 minutes), drizzle the cream cheese glaze evenly over the casserole and serve warm.

Notes

Letting the cinnamon rolls soak overnight is essential for the gooey texture. Use room temperature eggs to avoid clumping in the custard. If the casserole browns too fast, tent with foil after 30 minutes. The cream cheese glaze can be thinned with milk if too thick. Baking immediately without soaking results in dry rolls.
