  • 2 cups whole milk (or 2% for lighter option)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 pound breakfast sausage (mild or spicy)
  • 3 cups frozen hash browns (thawed)
  • 1 small onion, finely diced
  • 1 cup diced bell peppers (optional)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×13-inch baking dish with butter or non-stick spray.
  2. Cook the sausage in a large skillet over medium heat until browned and cooked through, about 7-9 minutes. Drain excess fat.
  3. In the same skillet, sauté the diced onion and bell peppers for 3-4 minutes until softened. Remove from heat.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder until smooth.
  5. Spread thawed hash browns evenly in the bottom of the prepared baking dish. Layer cooked sausage and sautéed veggies on top.
  6. Pour the egg mixture evenly over the layers, ensuring it seeps into all areas.
  7. Sprinkle shredded cheddar cheese evenly over the casserole, then top with grated Parmesan cheese.
  8. Bake uncovered for 45-50 minutes until eggs are set and cheese topping is bubbly and golden brown.
  9. Let the casserole rest for about 10 minutes before slicing and serving.

Notes

If the cheese browns too quickly, tent loosely with foil halfway through baking. Rest casserole 10 minutes before slicing to avoid runny texture. For make-ahead, assemble and refrigerate overnight, then bake fresh adding 5-10 minutes to bake time. Reheat leftovers in oven at 325°F for 10-15 minutes to restore crispy top.
