Easy Mini Caprese Skewers Recipe Perfect for Healthy Party Snacks

Fresh and colorful mini caprese skewers with cherry tomatoes, mozzarella, basil, and a syrupy balsamic glaze. Perfect for quick, healthy party snacks or light bites.

  • 20 cherry tomatoes, washed and dried
  • 20 small fresh mozzarella balls (bocconcini), drained well
  • 20 fresh basil leaves, washed and patted dry
  • ½ cup balsamic vinegar
  • 2 tablespoons granulated sugar
  • 1 tablespoon extra virgin olive oil (optional)
  • Light sprinkle of salt (optional)
  • Freshly ground black pepper, to taste
  • 20 wooden toothpicks or mini skewers

Instructions

  1. Make the Balsamic Glaze: Pour ½ cup (120 ml) balsamic vinegar into a small saucepan. Add 2 tablespoons (25 g) of granulated sugar. Heat over medium heat, stirring occasionally until the sugar dissolves. Let it simmer gently, reducing to about 2-3 tablespoons (30-45 ml), about 10-15 minutes. The glaze should be syrupy and coat the back of a spoon. Remove from heat and let cool. If too thick after cooling, whisk in a tiny splash of water to loosen.
  2. Prep the Ingredients: While the glaze simmers, wash and dry cherry tomatoes and basil leaves. Drain mozzarella balls well and pat dry with paper towels to avoid sogginess on skewers.
  3. Assemble the Skewers: On each toothpick or mini skewer, thread one cherry tomato, one basil leaf (fold if large), and one mozzarella ball. Start with tomato, then basil, then mozzarella. Repeat until all ingredients are used.
  4. Season and Finish: Arrange skewers on a serving platter. Lightly drizzle with extra virgin olive oil if using, and sprinkle with a pinch of salt and freshly ground black pepper. Drizzle the cooled balsamic glaze over the skewers.
  5. Serve Immediately or Chill: Serve fresh or store covered in the fridge for up to 4 hours. Bring to room temperature before serving. If prepping ahead, keep glaze separate until ready to serve to avoid sogginess.

Notes

Dry mozzarella balls and basil leaves thoroughly to prevent sogginess. Keep heat medium-low when reducing balsamic vinegar to avoid burning. Fold large basil leaves to prevent tearing. Add balsamic glaze just before serving to keep skewers fresh. Optional grilling for 1-2 minutes per side adds smoky flavor and melts mozzarella slightly.
