  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil (optional)
  • 4 cups (300g) fresh broccoli florets
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated or finely minced
  • 2 tablespoons vegetable oil or canola oil
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon brown sugar or honey
  • 1/2 cup (120ml) beef broth or water
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • Pinch of red pepper flakes (optional)

Instructions

  1. Slice 1 lb (450g) of flank steak thinly against the grain. In a bowl, combine beef slices with 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon cornstarch, and 1 teaspoon sesame oil. Mix well and marinate for at least 15 minutes.
  2. Wash and cut 4 cups (300g) broccoli into bite-sized florets. Mince 2 cloves garlic and grate 1 teaspoon fresh ginger.
  3. In a small bowl, whisk together 3 tablespoons low-sodium soy sauce, 1 tablespoon brown sugar or honey, 1/2 cup beef broth or water, and the cornstarch slurry. Add red pepper flakes if desired. Set aside.
  4. Heat 1 tablespoon vegetable oil in a wok or skillet over medium-high heat. Stir-fry broccoli for 3-4 minutes until bright green and tender-crisp. Remove and set aside.
  5. Add remaining 1 tablespoon oil to pan and increase heat to high. Add marinated beef in a single layer. Sear for 1 minute without moving, then stir-fry for 2-3 minutes until cooked through and browned. Let any liquid evaporate.
  6. Push beef to one side, add minced garlic and grated ginger. Stir quickly for 30 seconds until fragrant.
  7. Return broccoli to pan. Pour sauce over and stir-fry for 1-2 minutes until sauce thickens and coats beef and broccoli evenly.
  8. Taste and adjust seasoning if needed. Remove from heat and serve immediately over steamed rice or noodles.

Notes

Slice beef thinly against the grain for tenderness. Marinate beef for at least 15 minutes. Cook broccoli first to keep it crisp. Add sauce last to avoid sogginess. If sauce thickens too fast, add a splash of water. Avoid overcrowding pan by cooking in batches.
