  • 3 cloves garlic, minced
  • 1 teaspoon (5ml) freshly grated ginger
  • 1 teaspoon (5g) brown sugar
  • 1 tablespoon (8g) cornstarch
  • 2 tablespoons (30ml) vegetable oil
  • 1/4 cup (60ml) water or beef broth
  • Optional: red pepper flakes, sliced green onions for garnish

Instructions

  1. Slice the beef: Using a sharp knife, cut 1 pound (450g) flank steak into thin strips against the grain. Set aside.
  2. Prepare the marinade: In a bowl, combine 2 tablespoons (30ml) soy sauce, 1 teaspoon (5g) brown sugar, 1 tablespoon (8g) cornstarch, and 1 teaspoon (5ml) sesame oil. Add the sliced beef and toss well to coat. Let it marinate for at least 15 minutes or up to 30 minutes.
  3. Mix the sauce: In a separate bowl, whisk together 1/4 cup (60ml) low-sodium soy sauce, 2 tablespoons (30ml) oyster sauce, 1/4 cup (60ml) water or beef broth, minced garlic, and grated ginger. Set aside.
  4. Cook the broccoli: Heat 1 tablespoon (15ml) vegetable oil in a wok or large skillet over medium-high heat. Add the broccoli florets and stir-fry for about 3-4 minutes until bright green and slightly tender but still crisp. Remove broccoli and set aside.
  5. Cook the beef: Add another tablespoon (15ml) vegetable oil to the pan. Add the marinated beef in a single layer (cook in batches if needed). Stir-fry for 2-3 minutes until browned and just cooked through.
  6. Combine and simmer: Return the broccoli to the pan with the beef. Pour in the sauce mixture and toss everything together. Cook for another 1-2 minutes until the sauce thickens and coats the beef and broccoli. Add a splash of water or broth if sauce gets too thick.
  7. Final touches: Taste and adjust seasoning if needed. Sprinkle red pepper flakes if desired and garnish with sliced green onions.
  8. Serve immediately with steamed rice or noodles.

Notes

Do not overcook the broccoli to keep it crisp. Marinate the beef with cornstarch for tender, silky texture. Use high heat and avoid overcrowding the pan to get a good sear on the beef. Add garlic and ginger only with the sauce to prevent burning. For gluten-free, substitute tamari for soy sauce and use gluten-free oyster sauce or alternatives.
