  • 2 tablespoons honey (optional, for drizzling)
  • Pinch of freshly ground black pepper
  • Pinch of salt (optional, to season strawberries)

Instructions

  1. Preheat your oven to 375°F (190°C) and let it warm while you prepare the shells (about 10 minutes).
  2. Ensure phyllo sheets are completely thawed (about 2 hours at room temperature) and keep covered with a damp towel to prevent drying.
  3. Layer 4 sheets of phyllo, brushing each sheet lightly with melted butter before adding the next to create a flaky texture.
  4. Cut the layered phyllo stack into 12 equal squares (approximately 4×4 inches). Gently press each square into the cups of a 12-cup muffin tin, allowing edges to stick out slightly.
  5. Par-bake the phyllo shells for about 7 minutes until golden and crisp.
  6. Remove shells from oven and place about 1 tablespoon of brie into each cup. Top with 3-4 slices of strawberries, sprinkle with chopped thyme and a pinch of black pepper.
  7. Return to the oven and bake for another 8-10 minutes until the brie melts and strawberries soften slightly but retain shape.
