  • 1 medium cucumber, sliced into rounds and half moons
  • 45 large strawberries, hulled and sliced
  • 2 candy eyes or small mozzarella balls
  • 2 tablespoons black olives, sliced thin
  • 2 mini mozzarella balls or 2 tablespoons cream cheese
  • 1 cup cheddar cheese, cubed
  • 1 cup Swiss cheese, sliced or cubed
  • 12 slices salami, thinly sliced
  • 68 slices prosciutto or ham, folded
  • 1 box assorted crackers (about 7 oz)
  • 1 cup pretzel sticks or rounds (optional)
  • 1/2 cup red and green candy-coated chocolates
  • 46 fresh rosemary sprigs
  • 1/4 cup fresh mint leaves (optional)
  • 1/4 cup dried cranberries or pomegranate arils

Instructions

  1. Wash grapes, strawberries, cucumber, and mint leaves under cool water. Pat dry thoroughly.
  2. Slice cucumbers into rounds and half moons. Hull and slice strawberries.
  3. On the center of your board, create a large oval shape using green grapes for the Grinch’s face.
  4. Place cucumber rounds at the top for the brim of the Santa hat. Add strawberries on one side for the hat’s red point. Add a mini mozzarella ball or cream cheese at the tip for the pom-pom.
  5. Place two candy eyes (or mozzarella balls with a dot of olive for pupils) in the center of the grapes. Use thin slices of black olive for eyebrows and a curved smile.
  6. Shape a heart near the Grinch’s chin using sliced strawberries or a heart-shaped cookie cutter.
  7. Arrange cheddar cheese cubes, Swiss slices, salami, and prosciutto around the Grinch’s face. Fan meats or fold them into small piles for visual appeal. Alternate cheese and meat for variety.
  8. Place crackers and pretzel sticks around the edges, leaving gaps for pops of color.
  9. Fill small bowls with olives, mint leaves, candy-coated chocolates, and dried cranberries. Tuck rosemary sprigs in between for a festive look.
  10. Fill any gaps with extra grapes, strawberries, or crackers. Adjust facial features if needed.
  11. Use toothpicks to anchor tricky pieces if needed. Remove excess crackers if the board looks crowded.
  12. Serve with small tongs or toothpicks for easy grabbing. If making ahead, cover loosely with plastic wrap and refrigerate for up to 2 hours before serving.

Notes

Dry all produce thoroughly to prevent soggy crackers. Use toothpicks or cream cheese to anchor shifting pieces. Adapt ingredients for dietary needs—swap meats for veggies, use gluten-free crackers, or vegan cheeses. Assemble up to 2 hours ahead, but add crackers just before serving for best texture.
