Flavorful Grilled Flatbread Pizza with Peach Prosciutto and Arugula

A quick and easy grilled flatbread pizza combining smoky charred crust, sweet peaches, salty prosciutto, fresh arugula, and creamy mozzarella. Perfect for summer evenings and casual gatherings.

  • 1 store-bought flatbread or naan (Stonefire or La Brea Bakery recommended)
  • 2 ripe but firm peaches, thinly sliced
  • 46 slices thinly sliced prosciutto (San Daniele or Parma recommended)
  • 1 cup fresh arugula leaves
  • 4 oz fresh mozzarella balls, torn or sliced
  • 2 tablespoons extra-virgin olive oil
  • 12 tablespoons balsamic glaze (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the grill to medium-high heat (about 400°F). This takes roughly 10 minutes.
  2. Lightly brush both sides of each flatbread with extra-virgin olive oil. Season with a pinch of salt and pepper.
  3. Place the flatbread directly on the grill grates. Grill for about 2 minutes per side, or until grill marks appear and the bread is crisp but still pliable.
  4. Remove the flatbread from the grill and immediately top with torn fresh mozzarella.
  5. Layer thin peach slices evenly over the cheese, then drape the prosciutto slices on top.
  6. Optionally, place the topped flatbread back on the grill for 1-2 minutes with the lid closed to melt the cheese slightly. Be careful not to overcook.
  7. Once off the grill, scatter fresh arugula over the top. Drizzle with olive oil and balsamic glaze. Season with extra black pepper if desired.
  8. Cut into wedges using a sharp knife or pizza cutter. Serve warm.

Notes

Pat peach slices dry before placing on pizza to prevent soggy flatbread. Use medium-high heat to avoid burning the bread. For dairy-free, omit mozzarella or use plant-based cheese. If no grill is available, bake flatbread on a pizza stone at 450°F for 5-7 minutes and broil briefly to melt cheese.
