  • ½ cup (115g) unsalted butter, melted and cooled
  • ¾ cup (180ml) buttermilk
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (225g) fresh blueberries, tossed in 1 tablespoon flour
  • 2 tablespoons coarse sugar for topping

Instructions

  1. Preheat your oven to 400°F (200°C). Line your muffin tin with liners or grease it lightly.
  2. In a large bowl, whisk together all-purpose flour, baking powder, baking soda, salt, granulated sugar, and brown sugar until well combined.
  3. Toss fresh blueberries with 1 tablespoon of flour to coat and prevent sinking.
  4. In a separate bowl, whisk together eggs, melted and cooled unsalted butter, buttermilk, and vanilla extract until smooth.
  5. Pour the wet mixture into the dry ingredients. Gently fold with a wooden spoon or spatula until just combined; batter will be lumpy.
  6. Carefully fold the coated blueberries into the batter without breaking them.
  7. Spoon batter evenly into the prepared muffin cups, filling each about ¾ full.
  8. Sprinkle coarse sugar generously on top of each muffin for a crisp finish.
  9. Bake for 18-22 minutes, checking at 18 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  10. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
