  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 1/4 cups (300ml) buttermilk (or 1 1/4 cups milk + 1 tablespoon lemon juice or vinegar, let sit 5 minutes)
  • 2 large eggs, room temperature
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  2. In a separate medium bowl, beat the eggs until slightly frothy. Add the buttermilk, melted butter, and vanilla extract; stir gently to combine.
  3. Pour the wet ingredients into the dry ingredients and gently fold with a whisk or fork until just combined. Batter should be a bit lumpy; do not overmix.
  4. Preheat a non-stick skillet or cast iron pan over medium heat for 3-4 minutes. Test heat by sprinkling a few drops of water; if they sizzle and evaporate quickly, the pan is ready. Lightly grease if needed.
  5. Using a ladle or 1/4 cup measuring cup, pour batter onto the skillet forming 4-inch rounds. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip carefully and cook for another 1.5-2 minutes until golden brown and cooked through.
  6. Transfer cooked pancakes to a warm plate and cover loosely with foil while finishing the rest.

Notes

Do not overmix the batter; lumps are okay. Rest the batter for 5-10 minutes before cooking for fluffier pancakes. Flip pancakes only once when bubbles form and edges look set. If batter is too thick, add a splash of buttermilk. Use fresh leavening agents for best results.
