Ingredients

Scale
  • 3 1/4 cups (410g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 2 1/4 teaspoons (7g) active dry yeast (one packet)
  • 1/2 teaspoon salt
  • 3/4 cup (180ml) whole milk, warmed (about 110°F/43°C)
  • 1/4 cup (60g) unsalted butter, melted and slightly cooled
  • 1 large egg, room temperature
  • 1/2 cup (100g) packed brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup (60g) unsalted butter, softened
  • 4 ounces (115g) cream cheese, softened
  • 1/4 cup (60g) unsalted butter, softened
  • 1 1/2 cups (180g) powdered sugar, sifted
  • 1/2 teaspoon vanilla extract
  • 23 tablespoons milk (or dairy-free milk)

Instructions

  1. Activate the yeast by combining warm milk, granulated sugar, and yeast in a small bowl. Let sit 5-10 minutes until foamy.
  2. In a large bowl or stand mixer, combine flour and salt. Add melted butter, egg, and yeast mixture. Mix until shaggy dough forms.
  3. Knead dough by hand for 8-10 minutes or with dough hook for 5-7 minutes until smooth and elastic.
  4. Place dough in greased bowl, cover, and let rise in warm spot until doubled, about 1 to 1.5 hours.
  5. Mix brown sugar and cinnamon for filling. Set aside softened butter.
  6. Punch down dough and roll out on floured surface into 15×9-inch rectangle.
  7. Spread softened butter evenly over dough, then sprinkle cinnamon sugar mixture on top.
  8. Roll dough tightly from long edge into a log. Slice into 10 equal pieces.
  9. Cut each slice halfway through center and pinch ends together to form heart shapes. Place on parchment-lined baking sheet spaced 2 inches apart.
  10. Cover rolls loosely and let rise again until puffed, about 30-45 minutes.
  11. Preheat oven to 350°F (175°C). Bake rolls 20-25 minutes until golden brown and springy.
  12. While baking, beat cream cheese and softened butter until smooth. Gradually add powdered sugar, vanilla, and milk to desired glaze consistency.
  13. After rolls cool about 10 minutes, drizzle cream cheese glaze generously over warm rolls and serve immediately.

Notes

Do not rush the rising stages for fluffy texture. Use a warm, draft-free spot for rising. If glaze is too thick, add milk a teaspoon at a time; if too thin, add more powdered sugar. For vegan version, substitute butter with vegan margarine, egg with flax egg, and dairy milk and cream cheese with plant-based alternatives.
