  • 2 large eggs (room temperature, beaten well)
  • 1/2 cup unsalted butter, melted and slightly cooled
  • Extra butter for the skillet

Instructions

  1. Preheat your oven to 425°F (220°C). Place your cast-iron skillet in the oven to warm up while you prepare the batter.
  2. In a large bowl, combine the dry ingredients: cornmeal, flour, sugar, baking powder, baking soda, and salt. Whisk until evenly mixed.
  3. In a separate medium bowl, whisk together the wet ingredients: buttermilk, beaten eggs, and melted butter (not too hot).
  4. Pour the wet ingredients into the dry mixture. Gently fold with a rubber spatula just until combined; do not overmix.
  5. Carefully remove the hot skillet from the oven. Add about 2 tablespoons of butter and swirl to coat the bottom and sides.
  6. Pour the batter into the hot skillet and smooth the top evenly. You should hear a sizzle.
  7. Bake for 20-25 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Remove from oven and let cool for 10 minutes to set.
  9. Slice into wedges and serve warm, optionally with extra butter on top.

Notes

Use room-temperature ingredients for best results. Preheat the skillet with butter to get crispy edges. Do not overmix the batter to keep it fluffy. Let the cornbread rest before slicing to avoid crumbling. For dairy-free or gluten-free options, substitute butter and flour accordingly.
