  • 1 cup fresh strawberries, hulled and chopped
  • 1 cup (240 ml) heavy whipping cream, cold
  • 2 tablespoons powdered sugar

Instructions

  1. Mix dry ingredients: In a large bowl, sift together flour, baking powder, sugar, and salt. Set aside.
  2. Combine wet ingredients: In a separate bowl, whisk milk, eggs, melted butter, vanilla extract, and rose water until smooth.
  3. Make the batter: Pour wet ingredients into dry ingredients and stir gently until just combined; lumps are okay.
  4. Fold in strawberries gently, being careful not to crush them.
  5. Preheat and grease the pan: Warm a non-stick skillet or griddle over medium heat and brush lightly with melted butter.
  6. Cook pancakes: Pour about ¼ cup batter onto the skillet. Cook 2-3 minutes until bubbles form and edges set, then flip and cook another 2 minutes until golden.
  7. Keep pancakes warm on a cooling rack or in a warm oven while finishing the batch.
  8. Prepare whipped cream: Chill bowl and beaters for 10 minutes. Beat cold heavy cream until soft peaks form, gradually add powdered sugar, and beat until medium peaks form.

Notes

Use room temperature eggs and milk for better batter rise. Do not overmix batter to keep pancakes fluffy. Chill bowl and beaters before whipping cream for best results. If batter is too thick, add a tablespoon of milk; if too thin, add a little flour. Rose water is potent; stick to the measurement to avoid overpowering flavor.
