Fresh Caprese Skewers Bites are a quick and easy appetizer featuring cherry tomatoes, fresh mozzarella, and basil on skewers, drizzled with olive oil and balsamic glaze. Perfect for parties, potlucks, or a light snack.

Ingredients

  • Cherry tomatoes – ripe and firm (grape or mixed-colored recommended)
  • Fresh mozzarella balls (bocconcini or ciliegine size) – soft and milky
  • Fresh basil leaves – bright green, tender, and fragrant
  • Extra virgin olive oil – for drizzling
  • Balsamic glaze – store-bought or homemade reduction
  • Sea salt – to taste
  • Freshly cracked black pepper – to taste
  • Wooden or bamboo skewers – about 3 inches long

Instructions

  1. Wash and dry the cherry tomatoes and basil leaves carefully.
  2. If desired, lightly season mozzarella balls and tomatoes by tossing them gently in a small bowl with a drizzle of olive oil, a pinch of sea salt, and freshly cracked black pepper.
  3. Begin assembling the skewers by threading one cherry tomato onto the skewer, followed by a folded basil leaf, then a mozzarella ball. Repeat if skewers are longer or keep one set per skewer.
  4. Arrange the skewers on a serving platter.
  5. Drizzle extra virgin olive oil (about 1 tablespoon for 12 skewers) and balsamic glaze (1-2 teaspoons for 12 skewers) over the skewers.
  6. Finish with a sprinkle of sea salt and cracked black pepper to taste.

Notes

Assemble skewers just before serving to keep basil fresh and prevent wilting. Drizzle olive oil and balsamic glaze right before serving to avoid sogginess. For a dairy-free option, substitute mozzarella with marinated tofu cubes. Soak wooden skewers in water for 10 minutes if grilling to prevent burning.
