Fresh Carrot Apple Salad with Creamy Dressing

A light and refreshing salad with crunchy carrots, sweet apples, and a creamy homemade dressing. Perfect for any occasion, from casual lunches to holiday dinners.

  • 2 cups (200g) fresh carrots, peeled and shredded
  • 2 medium apples (250g), peeled and julienned
  • 1 tablespoon (15ml) lemon juice
  • 1/2 cup (60g) pecans or walnuts, toasted
  • 1/4 cup (40g) raisins
  • 1/2 cup (120g) plain Greek yogurt
  • 2 tablespoons (30g) mayonnaise
  • 1 tablespoon (15ml) honey
  • 1 teaspoon (5ml) Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Peel and shred 2 cups (200g) of fresh carrots using a grater or food processor. Set aside.
  2. Peel and julienne 2 medium apples (250g). Toss them with 1 tablespoon (15ml) of lemon juice to prevent browning.
  3. Toast 1/2 cup (60g) of pecans or walnuts in a dry skillet over medium heat until fragrant, about 3-5 minutes. Set aside to cool.
  4. In a small bowl, whisk together 1/2 cup (120g) plain Greek yogurt, 2 tablespoons (30g) mayonnaise, 1 tablespoon (15ml) honey, 1 teaspoon (5ml) Dijon mustard, and a pinch of salt and pepper. Taste and adjust seasoning as needed.
  5. In a large mixing bowl, toss the shredded carrots, julienned apples, toasted nuts, and 1/4 cup (40g) raisins. Pour the dressing over the mixture and gently toss until everything is evenly coated.
  6. Cover the bowl and refrigerate for at least 10-15 minutes to let the flavors meld together. For best results, let it chill for up to an hour.
  7. Give the salad a final toss before serving. Garnish with additional nuts or a sprinkle of fresh parsley for a pop of color.

Notes

For best crunch, ensure carrots and apples are well-chilled before preparation. Toasting the nuts enhances their flavor. This salad can be made ahead of time by preparing the dressing and chopping the ingredients separately, then combining them before serving.
