  • 2 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 1 tablespoon olive oil (for grilling)
  • Salt and freshly ground black pepper (to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 4 cups Romaine lettuce, chopped
  • ½ cup grated Parmesan cheese
  • ½ cup Caesar dressing (store-bought or homemade)
  • ½ cup croutons, roughly crushed (optional)
  • 4 large flour tortillas (10-inch / 25 cm)

Instructions

  1. In a small bowl, combine salt, black pepper, garlic powder, and smoked paprika. Rub the mixture evenly over both sides of the chicken breasts. Let them rest for 5-10 minutes.
  2. Heat a grill pan over medium-high heat and brush with olive oil to prevent sticking.
  3. Grill the chicken breasts for about 6 minutes per side (approximately 12 minutes total), or until the internal temperature reaches 165°F (74°C). Flip only once.
  4. Remove chicken from heat and let rest on a plate for 5 minutes.
  5. While the chicken rests, toss chopped Romaine lettuce with Caesar dressing in a medium bowl. Add grated Parmesan and crushed croutons, mixing gently.
  6. Slice the rested chicken into thin strips about ¼-inch thick.
  7. Lay out each tortilla flat. Place a generous handful of the dressed Romaine salad in the center, then top with sliced chicken strips.
  8. Fold in the sides of the tortilla and roll tightly from the bottom up. Wrap in parchment paper or foil if desired.
  9. Serve immediately, optionally slicing each wrap diagonally.

Notes

Resting the chicken after grilling keeps it juicy. Toss lettuce with dressing just before assembling to avoid sogginess. Crushing croutons slightly adds crunch without tearing the tortilla. For dairy-free or gluten-free options, substitute ingredients accordingly.
