A simple and refreshing 5-ingredient recipe for homemade popsicles using fresh fruit, natural sweeteners, and a touch of lemon juice. Perfect for summer fun and easy to customize.

  • 2 cups (300g) fresh fruit (strawberries, mangoes, blueberries, peaches, or seasonal fruit)
  • 2 tablespoons (30ml) fresh lemon juice
  • 2 tablespoons (30ml) honey or maple syrup (adjust to taste; agave for vegan option)
  • 1 cup (240ml) water or coconut water
  • Mint leaves (optional, a few fresh leaves)

Instructions

  1. Prepare the Fruit (10 minutes): Wash and chop fresh fruit into chunks. Remove stems or leaves from berries. Peel and dice mangoes or peaches.
  2. Blend Ingredients (5 minutes): Combine fruit, lemon juice, honey or maple syrup, and water or coconut water in a blender or food processor. Blend until smooth but slightly textured if preferred. Optionally strain through a fine mesh sieve for a smoother texture.
  3. Add Optional Ingredients (1 minute): Tear fresh mint leaves and stir in, or add a pinch of sea salt to enhance sweetness.
  4. Pour into Molds (5 minutes): Fill popsicle molds with the mixture, leaving space at the top for expansion. Insert sticks and place molds on a baking sheet for stability.
  5. Freeze (4-6 hours): Freeze molds until solid, preferably overnight.
  6. Unmold and Enjoy: Run warm water over molds briefly to loosen popsicles and gently remove.

Notes

Use ripe, firm fruit for best texture. Leaving some fruit bits adds texture and homemade feel. Strain for smoother popsicles. Rinse molds in warm water before unmolding to ease removal. Freeze overnight for best consistency. Stir mixture halfway through freezing to reduce ice crystals. Experiment with different fruits, sweeteners, or liquids like coconut water or herbal tea.
