A vibrant and refreshing salad featuring crisp Honeycrisp apples, creamy feta, and a homemade honey vinaigrette. Perfect for any occasion and ready in under 15 minutes.

  • 2 large Honeycrisp apples, thinly sliced
  • 4 cups fresh baby spinach leaves, washed and dried
  • 1/2 cup crumbled feta cheese
  • 1/2 cup toasted walnuts
  • 1/4 small red onion, thinly sliced
  • 1/4 cup dried cranberries
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the Honeycrisp apples. Slice them thinly, removing the core, and set aside.
  2. Heat a small skillet over medium heat. Add the walnuts and toast for 2-3 minutes, stirring frequently to prevent burning. Remove from heat and let them cool.
  3. In a small mixing bowl, whisk together olive oil, honey, apple cider vinegar, Dijon mustard, and a pinch of salt and pepper. Taste and adjust seasoning if needed.
  4. In a large salad bowl, add the baby spinach leaves. Scatter the sliced red onion and dried cranberries on top.
  5. Arrange the sliced Honeycrisp apples over the greens to create a beautiful display.
  6. Sprinkle the crumbled feta cheese and toasted walnuts evenly over the salad.
  7. Pour the honey vinaigrette over the salad and gently toss until everything is evenly coated. Serve immediately and enjoy!
