Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large bowl, whisk together gluten-free flour blend, cocoa powder, salt, and baking powder until well combined.
  3. In another bowl, mix granulated sugar, brown sugar, melted butter, and melted coconut oil until smooth and glossy.
  4. Beat in eggs one at a time, then stir in vanilla extract and espresso powder if using.
  5. Gradually fold the dry ingredients into the wet mixture until no flour streaks remain. Fold in dark chocolate chips.
  6. Pour batter into the prepared pan and smooth the surface. Bake for 25-30 minutes until edges are set but center is slightly underbaked (toothpick with moist crumbs).
  7. Cool brownies completely in the pan on a rack for at least 1 hour. Use parchment overhang to lift brownies out and slice into squares.
