A quick and easy cheesy party snack featuring a round loaf of bread layered with garlic butter, parmesan, and mozzarella cheese, baked to golden perfection with a crispy crust and gooey center.

  • 1 large round sourdough or Italian bread loaf (1214 ounces / 340400 grams)
  • 1/2 cup (113 grams) unsalted butter, melted
  • 4 cloves garlic, finely minced or pressed
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • A pinch of freshly ground black pepper
  • 1 cup (about 100 grams) freshly grated Parmesan cheese
  • 1 cup (about 113 grams) shredded mozzarella cheese
  • 2 tablespoons fresh parsley, finely chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil.
  2. Place the loaf on a cutting board. Using a sharp bread knife, make vertical cuts about 1 inch apart, slicing downward but stopping about 1/2 inch from the bottom. Turn the bread 90 degrees and repeat to create a grid pattern of cubes.
  3. In a medium bowl, combine melted butter, minced garlic, garlic powder, salt, and black pepper. Stir well.
  4. Mix half of the Parmesan and mozzarella cheeses and the chopped parsley into the garlic butter mixture.
  5. Gently spread the garlic butter and cheese mixture between the bread cubes, getting the mixture deep inside.
  6. Sprinkle the remaining Parmesan and mozzarella evenly over the top of the loaf.
  7. Loosely wrap the bread with foil to keep it moist during baking.
  8. Place the wrapped loaf on the baking sheet and bake for 15 minutes. Remove the foil and bake for another 10-12 minutes until the cheese is bubbly and the crust is golden brown.
  9. Let the bread cool for 5 minutes before serving.

Notes

Use a sharp serrated bread knife to avoid squashing the loaf. Melted but slightly cooled butter spreads better. Wrap the bread loosely in foil during baking to trap steam and keep it moist, then remove foil to crisp the crust. Fresh minced garlic provides better flavor than garlic powder alone. You can prepare the bread a few hours ahead and refrigerate before baking. Leftovers can be stored in the fridge for up to 3 days or frozen for up to a month.
