  • 1 large egg, room temperature

  • Green gel food coloring
  • Red heart-shaped sprinkles
  • White royal icing or vanilla frosting
  • Assorted holiday sprinkles (optional)

Instructions

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  2. In a large mixing bowl, beat butter until light and fluffy (about 2 minutes). Add sugar and continue beating until pale and creamy.
  3. Beat in egg, sour cream, vanilla extract, and almond extract (if using) until smooth.
  4. Add green gel food coloring, starting with 1/4 teaspoon and adding more as needed for a bright Grinch-green. Mix well.
  5. Gradually add dry ingredients to wet mixture, mixing on low until just combined. Do not overmix.
  6. Cover dough with plastic wrap and refrigerate for 30 minutes (or freeze for 10 minutes if short on time).
  7. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. On a lightly floured surface, roll out chilled dough to about 1/4 inch thick. Cut out Christmas tree shapes using cookie cutter or template.
  9. Place cookies 1 inch apart on prepared sheets. Bake for 8-10 minutes, until edges are set and tops are just barely golden.
  10. Let cookies cool on baking sheet for 2 minutes, then transfer to wire racks to cool completely.
  11. Once cool, decorate with white icing or frosting to outline and create garland details. Add red heart-shaped sprinkles to the center of each tree. Sprinkle with colored nonpareils or gold stars if desired.
  12. Let icing dry for 30 minutes before stacking or serving (or refrigerate for 10 minutes to speed up).

For fluffiest cookies, use room temperature ingredients and fresh baking powder. Chill dough before rolling to prevent spreading. Gel food coloring gives vibrant color without affecting texture. Store cookies in an airtight container for up to 5 days or freeze undecorated cookies for up to 2 months. Decorate only after cookies are fully cooled for best results.
