  • 1 cup rolled oats (quick or old-fashioned)
  • 1/2 cup natural peanut butter or almond butter
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup mini chocolate chips (semi-sweet or dark)
  • 1 tablespoon ground flaxseed or chia seeds (optional)
  • Pinch of salt

Instructions

  1. Drain the cottage cheese by placing it in a fine sieve or cheesecloth for 5 minutes to remove excess moisture.
  2. Combine the oats and flaxseed in a mixing bowl. For a smoother texture, pulse oats and flaxseed in a food processor for 10 seconds (optional).
  3. Add the drained cottage cheese, natural peanut butter, honey, and vanilla extract to the bowl. Stir well with a spatula until the mixture is creamy and slightly sticky.
  4. Fold in the mini chocolate chips gently and add a pinch of salt to enhance sweetness.
  5. Chill the mixture in the refrigerator for about 15 minutes to firm up slightly.
  6. Scoop out tablespoon-sized portions and roll into balls using your hands or a small cookie scoop. Place on a parchment-lined baking sheet.
  7. Return the cookie dough bites to the fridge for another 30 minutes to set completely before serving.

Notes

Drain cottage cheese well to avoid soggy bites. Pulse oats for a finer texture if desired. Adjust sweetness carefully. Chill thoroughly for best texture. If dough is too sticky, add more oats or flaxseed; if too dry, add a splash of almond milk.
