Instructions

  1. Preheat and prep: Toast the pecans in a skillet over medium heat for 5-7 minutes until fragrant. Let them cool.
  2. Combine the base: In a large mixing bowl, add softened cream cheese, shredded cheddar cheese, garlic powder, salt, and pepper. Mix until smooth and creamy.
  3. Add the mix-ins: Fold in chopped cranberries, toasted pecans, and green onions. Mix until evenly distributed.
  4. Shape the cheese ball: Lay a large piece of plastic wrap on the counter. Scoop the cheese mixture onto the wrap and form it into a ball. Wrap tightly and refrigerate for at least 2 hours or overnight.
  5. Coat the cheese ball: Remove the cheese ball from the plastic wrap and roll it in additional chopped pecans and cranberries until fully coated.
  6. Serve: Place on a serving platter, garnish with fresh parsley if desired, and serve with crackers, veggie sticks, or bread slices.
