Ingredients

  • Day-old bread, cut into cubes (sourdough works best)
  • Unsalted butter, melted
  • Celery, diced
  • Onion, chopped finely
  • Garlic, minced
  • Chicken or vegetable broth (low-sodium recommended)
  • Dried cranberries
  • Walnuts, toasted and roughly chopped
  • Fresh herbs: sage, thyme, and parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
  2. Cut the day-old bread into 1-inch cubes and set aside. If the bread isn’t stale, leave it out overnight or toast lightly in the oven for 10 minutes.
  3. Heat a skillet over medium heat and melt the butter. Add diced celery and onion, cooking until soft and fragrant (about 5 minutes). Add minced garlic and cook for another minute.
  4. Stir in sage, thyme, and parsley, letting them release their aroma.
  5. In a large mixing bowl, combine bread cubes, sautéed veggies, dried cranberries, and toasted walnuts. Gradually pour in chicken or vegetable broth, mixing until the bread is evenly moistened but not soggy. Add salt and pepper to taste.
  6. Spread the stuffing evenly in the prepared baking dish and cover with aluminum foil.
  7. Bake for 30 minutes covered. Remove the foil and bake for another 15 minutes to achieve a golden crust.
  8. Let the stuffing cool for a few minutes before serving. Garnish with fresh parsley.
