  • 4 salmon fillets (6 oz each), skin-on or skinless
  • 2 tbsp finely chopped rosemary
  • 2 tbsp finely chopped thyme
  • 2 tbsp finely chopped parsley
  • 1/2 cup panko breadcrumbs
  • 1/4 cup freshly grated Parmesan cheese (optional)
  • 2 cloves garlic, finely minced
  • 2 tbsp olive oil
  • 1/4 cup unsalted butter, melted
  • Juice from 1 fresh lemon (about 2 tbsp)
  • Zest from 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper or foil.
  2. Pat the salmon fillets dry with paper towels and place them on the prepared baking sheet, skin-side down if applicable.
  3. Season the salmon fillets with salt and pepper to taste.
  4. In a small bowl, mix the chopped herbs, panko breadcrumbs, Parmesan cheese (if using), minced garlic, and olive oil. Stir until the mixture resembles wet sand.
  5. Using a spoon or your hands, press the herb mixture onto the top of each salmon fillet, forming an even layer.
  6. Bake the salmon in the preheated oven for 12-15 minutes, depending on the thickness of the fillets. The salmon should be opaque and flaky when done.
  7. While the salmon is baking, prepare the lemon butter sauce. In a small saucepan over low heat, melt the butter and stir in the lemon juice and zest. Cook for 1-2 minutes, then remove from heat.
  8. Once the salmon is cooked, drizzle the lemon butter sauce over each fillet before serving.

Notes

For a crispier crust, broil the salmon for 2 minutes after baking. Use fresh salmon for better flavor and texture. Avoid overcooking by aiming for an internal temperature of 145Β°F (63Β°C).
