  • 2 cups cooked Arborio rice
  • 1 Β½ cups leftover stuffing
  • Β½ cup grated Parmesan cheese
  • ΒΌ cup chopped fresh parsley
  • Mozzarella cheese, cut into small cubes
  • 2 eggs, beaten
  • Β½ cup all-purpose flour
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine cooked Arborio rice, leftover stuffing, grated Parmesan cheese, and chopped fresh parsley. Mix until well combined.
  2. Cut mozzarella cheese into small cubes and set aside.
  3. Take a small portion of the rice-stuffing mixture (about 2 tablespoons) and flatten it in your palm. Place a cube of mozzarella in the center and shape the mixture around it to form a ball. Repeat until all the mixture is used.
  4. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  5. Roll each ball first in flour, then in egg, and finally in breadcrumbs, ensuring they are well coated.
  6. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350Β°F (175Β°C). Carefully lower the arancini into the hot oil using a slotted spoon.
  7. Fry the arancini in batches for 3-4 minutes or until golden brown and crispy. Avoid overcrowding the pot.
  8. Remove the arancini and place them on paper towels to drain excess oil. Let them cool slightly before serving.

Notes

Chill the mixture in the fridge for 30 minutes if it feels too soft to shape. Fry one arancini first to test seasoning and texture. Serve immediately for the best taste and texture.
