  • 1 ounce pomegranate juice (freshly squeezed or store-bought)
  • 0.5 ounces orange liqueur (Cointreau or Grand Marnier)
  • 0.25 ounces simple syrup (optional)
  • Champagne or sparkling wine (Prosecco or Cava)
  • Fresh pomegranate arils (for garnish)
  • Fresh rosemary sprigs (for garnish)

Instructions

  1. Chill your champagne and pomegranate juice thoroughly.
  2. Prepare your garnish by removing pomegranate arils and rinsing rosemary sprigs.
  3. In each champagne flute, pour 1 ounce of pomegranate juice and 0.5 ounces of orange liqueur. Add 0.25 ounces of simple syrup if desired.
  4. Slowly pour champagne into the flute until nearly full, pouring gently along the side of the glass to preserve bubbles.
  5. Garnish with a few pomegranate arils and a sprig of rosemary. Optionally, sugar the rim of the glass beforehand.
  6. Serve immediately while the champagne is still bubbly and fresh.
