Irresistible Roasted Carrots Recipe with Goat Cheese

  • 1 pound fresh carrots, peeled and trimmed
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup crumbled goat cheese
  • 2 tablespoons chopped fresh parsley or thyme
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Peel and trim the carrots. If they’re particularly thick, slice them in half lengthwise to ensure even cooking. Place them in a large mixing bowl.
  3. Drizzle the carrots with 2 tablespoons of olive oil, then sprinkle with ½ teaspoon of salt and ¼ teaspoon of freshly ground black pepper. Toss until evenly coated.
  4. Arrange the carrots in a single layer on the prepared baking sheet. Roast for 20 minutes, then use tongs to flip them over for even caramelization.
  5. After flipping, drizzle 1 tablespoon of honey over the carrots and continue roasting for another 15-20 minutes, or until they’re tender and golden brown.
  6. Once the carrots are out of the oven, transfer them to a serving platter. Crumble ½ cup of goat cheese over the top, sprinkle with 2 tablespoons of chopped fresh parsley or thyme, and add a squeeze of lemon juice to brighten the flavors.
  7. Serve warm and enjoy!
