Crispy, buttery Hasselback potatoes infused with roasted garlic and fresh herbs—perfect as a side dish for any meal.

  • 4 medium-sized Russet or Yukon Gold potatoes
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 1 bulb fresh garlic
  • 2 tablespoons fresh rosemary, chopped (or thyme/parsley as alternatives)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with foil or parchment paper.
  2. Slice off the top of a garlic bulb, drizzle with olive oil, and wrap it in foil. Roast in the oven for 40 minutes until soft and caramelized. Set aside to cool.
  3. Wash and dry the potatoes. Place a potato between two chopsticks or wooden spoons, then carefully slice thin slits about 1/8-inch apart, stopping before cutting all the way through. Repeat with all potatoes.
  4. Squeeze the roasted garlic cloves out of their skins into a small bowl. Mash them with a fork until smooth. Add melted butter, olive oil, chopped rosemary, salt, and pepper. Mix well.
  5. Using a pastry brush, generously coat the potatoes with the garlic-herb butter mixture, ensuring the mixture gets into all the slits.
  6. Arrange the potatoes on the prepared baking sheet. Bake for 45-50 minutes, brushing with more garlic butter halfway through. The potatoes should be golden brown and crispy.
  7. If desired, sprinkle grated Parmesan cheese over the potatoes during the last 5 minutes of baking.
  8. Remove from the oven and garnish with extra fresh herbs or a squeeze of lemon juice before serving.

Notes

Use similar-sized potatoes for even cooking. Be generous with the garlic-herb butter for crispy edges. Add optional toppings like cheese or bacon for extra indulgence.
