  • ⅓ cup (75 g) granulated sugar
  • 6 tablespoons (85 g) unsalted butter, melted
  • Pinch of salt
  • ½ cup (120 ml) high-quality honey
  • ¾ cup (150 g) granulated sugar
  • ½ cup (120 ml) heavy cream
  • 2 tablespoons (30 g) unsalted butter, melted
  • 3 large eggs, room temperature
  • 2 teaspoons (10 ml) vanilla extract
  • 1 teaspoon (5 g) flaky sea salt (plus more for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, melted butter, and a pinch of salt until it resembles wet sand. Press the mixture firmly into a 9-inch pie dish, covering the bottom and sides evenly. Bake for 8-10 minutes until golden brown. Let it cool completely.
  3. In a medium mixing bowl, whisk together the honey, sugar, heavy cream, and melted butter until smooth. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract and 1 teaspoon of flaky sea salt.
  4. Once the crust has cooled, pour the honey mixture into it, making sure it spreads evenly.
  5. Place the pie in the oven and bake at 350°F (175°C) for 35-40 minutes, or until the filling is set but slightly jiggles in the center.
  6. Remove the pie from the oven and let it cool completely on a wire rack. This step is crucial for the filling to fully set.
  7. Just before serving, sprinkle a generous amount of flaky sea salt over the top of the pie.
