Crunchy, creamy, tangy, and packed with bold flavors—this salad combines roasted brussels sprouts, crispy chickpeas, and a velvety tahini Caesar dressing for a nourishing yet indulgent dish.

  • 1 lb (450 g) brussels sprouts, trimmed and halved
  • 12 tbsp olive oil
  • 1 cup (165 g) canned chickpeas, drained and patted dry
  • 3 tbsp tahini
  • 2 tbsp freshly squeezed lemon juice
  • 1 small clove garlic, minced or grated
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce (or vegetarian alternative)
  • 2 tbsp grated Parmesan cheese (or nutritional yeast for vegan option)
  • Salt and pepper to taste
  • 12 tbsp water
  • Optional toppings: croutons, chopped parsley, or extra Parmesan

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash, trim, and halve the brussels sprouts. Toss them with 1-2 tablespoons of olive oil, a sprinkle of salt, and pepper. Spread them evenly on the baking sheet.
  3. Place the baking sheet in the oven and roast for 20-25 minutes, flipping halfway through, until they’re golden brown and crispy.
  4. Toss the chickpeas with olive oil, salt, and pepper. Spread them on another baking sheet or alongside the brussels sprouts. Roast for 15-20 minutes, shaking the pan occasionally.
  5. In a small bowl, whisk together the tahini, lemon juice, minced garlic, Dijon mustard, Worcestershire sauce, and Parmesan. Add 1-2 tablespoons of water to thin it out to your preferred consistency.
  6. In a large mixing bowl, combine the roasted brussels sprouts and chickpeas. Drizzle the tahini Caesar dressing over the top and toss until evenly coated.
  7. Transfer the salad to a serving platter and garnish with extra Parmesan, croutons, or chopped parsley if desired.
