Loaded Tater Tot Casserole Recipe Easy Cheesy Bacon Comfort Meal

A quick and easy comfort food casserole featuring crispy tater tots, cheesy layers, and smoky bacon, perfect for family dinners and potlucks.

  • 32 ounces frozen tater tots
  • 8 slices bacon, cooked crisp and chopped
  • 1 pound ground beef, browned and drained
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup frozen peas (optional)
  • Salt and pepper to taste
  • 2 tablespoons fresh chives or green onions, chopped for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a large skillet over medium heat until crisp, about 8–10 minutes. Remove and drain on paper towels, then chop into bite-sized pieces. Leave about 1 tablespoon of bacon fat in the skillet.
  3. Add ground beef to the skillet with the bacon fat. Crumble and cook until no longer pink, about 6–8 minutes. Drain excess fat if needed.
  4. Add chopped onion and minced garlic to the beef. Cook for another 3–4 minutes until softened and fragrant.
  5. In a large bowl, combine the cooked beef mixture, condensed cream of mushroom soup, sour cream, shredded mozzarella, frozen peas (if using), and salt and pepper. Stir until well combined.
  6. Spread half of the frozen tater tots evenly in the bottom of a 9×13 inch baking dish.
  7. Pour the beef and cream mixture over the tater tots, spreading it out evenly.
  8. Sprinkle the chopped bacon evenly over the beef mixture, then top with the remaining tater tots.
  9. Cover the whole casserole with shredded sharp cheddar cheese.
  10. Bake in the preheated oven for 35–40 minutes, or until the tater tots are golden brown and the cheese is bubbly and slightly browned.
  11. Remove from oven and let sit for 5 minutes.
  12. Sprinkle chopped fresh chives or green onions on top before serving.

Notes

If cheese browns too quickly, tent casserole with foil halfway through baking. Ensure tater tots are evenly spaced for crispiness. For dairy-free or gluten-free versions, use plant-based cheese and sour cream alternatives and gluten-free soup or homemade sauce. Let casserole rest 5 minutes before serving for easier portioning.
