  • 2 large eggs, room temperature

  • 1 cup (120 g) almond flour
  • ½ cup (60 g) gluten-free oat flour (can substitute with rice flour)
  • 2 tbsp ground flaxseed
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup (50 g) chopped walnuts (optional, toasted lightly)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with non-stick spray or line with parchment paper.
  2. Mash the bananas in a large mixing bowl until mostly smooth with a few small lumps remain.
  3. Add eggs, almond milk, honey or maple syrup, and vanilla extract to the mashed bananas. Whisk until well combined and creamy.
  4. In a separate bowl, whisk together almond flour, gluten-free oat flour, ground flaxseed, baking soda, and salt.
  5. Slowly fold the dry ingredients into the wet banana mixture using a spatula or wooden spoon until just combined. Do not overmix.
  6. Stir in the chopped walnuts, reserving a few to sprinkle on top if desired.
  7. Pour the batter evenly into the prepared loaf pan. Smooth the top and sprinkle reserved walnuts on top.
  8. Bake for 50-60 minutes, checking at 50 minutes with a toothpick. It should come out clean or with a few moist crumbs.
  9. Cool the bread in the pan for 15 minutes, then transfer to a cooling rack to cool completely.
  10. Slice and enjoy warm or at room temperature. Store leftovers wrapped tightly or in an airtight container.
