  • 1¾ cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves (optional)
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • ½ cup (120ml) vegetable oil (or melted coconut oil)
  • 2 large eggs, room temperature
  • 1 cup (240ml) canned pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon pure vanilla extract
  • ½ cup (150g) Nutella, slightly warmed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan lightly with butter or non-stick spray and line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until evenly combined.
  3. In a separate bowl, whisk granulated sugar, brown sugar, and vegetable oil until smooth. Add eggs one at a time, whisking well after each. Stir in pumpkin puree and vanilla extract until smooth and glossy.
  4. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Do not overmix; some lumps are okay.
  5. Warm the Nutella slightly. Pour half the batter into the loaf pan, then dollop half the Nutella on top. Add the remaining batter, then the rest of the Nutella dollops. Use a knife or skewer to gently swirl the Nutella through the batter.
  6. Bake for 55-65 minutes. Check doneness at 55 minutes by inserting a toothpick in a Nutella-free spot; it should come out with a few moist crumbs but no wet batter.
  7. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Do not overmix the batter to keep the bread tender. Warm Nutella slightly for easier swirling. Check doneness in a Nutella-free spot to avoid false gooeyness. Tent with foil after 40 minutes if oven runs hot. Optionally sprinkle flaky sea salt on top before baking for contrast.
