  • 8-ounce (227g) Brie wheel, whole rind on
  • 1 cup (100g) fresh cranberries, rinsed and picked over
  • 1/2 cup (60g) pecans, roughly chopped and toasted
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon honey, preferably raw or wildflower
  • 1 teaspoon lemon zest, finely grated
  • 1/4 teaspoon ground cinnamon (optional)
  • 1 teaspoon fresh thyme, finely chopped (optional garnish)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toast the pecans in a dry skillet over medium heat for 3-5 minutes until fragrant and lightly browned. Remove from heat and let cool.
  3. In a mixing bowl, combine fresh cranberries, toasted pecans, brown sugar, honey, lemon zest, a pinch of salt, and cinnamon if using. Stir gently until evenly mixed.
  4. Optionally, score the top of the Brie wheel in a crisscross pattern with a sharp knife.
  5. Place the Brie wheel in an oven-safe dish or skillet.
  6. Spoon the cranberry pecan mixture generously over the top, spreading evenly without pressing down too hard.
  7. Bake for 15-20 minutes until the Brie is soft and gooey in the center and the topping is bubbling with a glossy finish.
  8. Remove from oven and let sit for 5 minutes to thicken slightly.
  9. Garnish with fresh thyme leaves if desired and serve warm with crackers, sliced baguette, or apple slices.

Notes

Use room temperature Brie for even softening. Toast pecans carefully to avoid bitterness. Let Brie rest after baking to avoid cheese leakage. Frozen cranberries can be used if thawed and drained. Nut-free alternatives include toasted pumpkin seeds or omitting nuts.
