  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chicken or turkey broth (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine softened butter, chopped rosemary, thyme, sage, minced garlic, lemon zest, kosher salt, and black pepper. Mix until smooth.
  3. Gently loosen the turkey skin using your fingers or a small knife, being careful not to tear it.
  4. Rub about two-thirds of the herb butter mixture evenly under the skin, covering as much surface as possible. Spread the remaining butter on top of the skin.
  5. Place the turkey breast skin-side up in a roasting pan. Drizzle olive oil over the skin.
  6. Pour chicken or turkey broth into the bottom of the pan to keep the meat moist.
  7. Roast in the oven for 60 to 75 minutes, or until the internal temperature reaches 160°F (71°C). Start checking at 55 minutes to avoid overcooking.
  8. Remove the turkey breast from the oven and tent loosely with foil. Let it rest for 10 to 15 minutes.
  9. Slice the turkey breast against the grain into thick slices and serve immediately.

Notes

If skin browns too quickly, tent loosely with foil during roasting. Keep an eye on broth level and add more if it evaporates early. For dairy-free, substitute butter with vegan butter or olive oil. Use dried herbs at one-third the fresh herb quantity. For a smoky twist, add smoked paprika to herb butter. Let turkey rest after roasting to keep it juicy.
