Instructions

  1. In a large bowl, combine 1 lb ground chuck and ½ lb ground brisket. Add 1 tsp kosher salt, ½ tsp black pepper, and 1 tsp Worcestershire sauce. Mix gently by hand until just combined, avoiding overmixing. (Approx. 5 minutes)
  2. Divide the mixture into 12 equal portions (about 2 oz each). Roll into balls and gently flatten into 2-inch diameter patties about ½ inch thick. Make a slight indentation in the center with your thumb to prevent puffing during cooking. (Approx. 10 minutes)
  3. Preheat grill to medium-high or heat a cast iron skillet over medium heat. Lightly oil the surface to prevent sticking. (Approx. 5 minutes)
  4. Place patties on grill or skillet. Cook about 3 minutes per side for medium doneness. Avoid pressing down on patties. In the last minute, add cheese slices if using and cover with lid or foil to melt. (Approx. 6-8 minutes)
