Perfect Strawberry Champagne Popsicles

A quick and elegant summer treat combining fresh strawberries and champagne in a refreshing popsicle. Perfect for gatherings or a sophisticated indulgence on a stick.

  • 2 cups fresh strawberries, hulled and halved
  • 1 cup (240 ml) champagne (brut or extra dry recommended)
  • 1/4 cup (50 g) granulated sugar
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1/4 cup (60 ml) water
  • Optional: fresh mint leaves for garnish or blending

Instructions

  1. Rinse, hull, and halve about 2 cups (about 300 grams) of fresh strawberries. Set aside a few whole strawberries for garnish if desired.
  2. In a small saucepan, combine 1/4 cup sugar and 1/4 cup water. Heat gently over low heat, stirring until sugar dissolves completely. Let cool to room temperature.
  3. Place prepared strawberries into a blender or food processor. Add 1 tablespoon fresh lemon juice and the cooled simple syrup. Blend until smooth and silky. For a seedless texture, strain puree through a fine mesh sieve.
  4. Gently fold in 1 cup chilled champagne or sparkling wine, being careful not to stir vigorously to preserve bubbles.
  5. Pour mixture into popsicle molds, leaving space at the top. Drop in whole strawberries if using.
  6. Insert sticks, cover, and freeze for at least 6 hours or overnight until solid.
  7. To unmold, briefly run warm water over the outside of molds and gently pull out popsicles. Serve immediately.

Notes

Add champagne last and fold gently to keep bubbles intact. Use simple syrup instead of granulated sugar to avoid graininess. Warm molds briefly before unmolding for easy release. For non-alcoholic version, substitute champagne with sparkling water or lemon-lime soda. Popsicles keep well up to two weeks but are best enjoyed within a few days for optimal fizz.
