  • 3 large sweet potatoes (about 2 pounds), peeled and cubed
  • 1/4 cup unsalted butter, melted
  • 1/3 cup packed brown sugar
  • 1/3 cup milk
  • 2 large eggs, beaten
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup chopped pecans
  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 1/3 cup unsalted butter, melted

Instructions

  1. Peel and chop the sweet potatoes into even chunks. Place them in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender. Drain and set aside.
  2. Mash the sweet potatoes until smooth. Add the melted butter, brown sugar, milk, beaten eggs, vanilla extract, cinnamon, and nutmeg. Mix until fully combined and creamy. Taste and adjust the sweetness or spice to your preference.
  3. In a medium mixing bowl, combine the chopped pecans, brown sugar, flour, and melted butter. Stir until it forms a sticky crumble.
  4. Preheat your oven to 350Β°F (175Β°C). Grease your 9×13-inch baking dish with a little butter or cooking spray. Spread the sweet potato mixture evenly in the dish. Sprinkle the pecan topping over the sweet potatoes, covering the entire surface.
  5. Place the dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and bubbly. Keep an eye on it during the last few minutes to prevent burning.
